Crispy Signature Chicken Thighs
Golden, crispy skin. Juicy chicken. Big flavor.
Perfectly roasted chicken thighs with crackling golden skin, tender meat, and bold, savory flavor in every bite.
Instructions
1. Dry the Chicken
Pat the chicken thighs thoroughly dry with paper towels, paying particular attention to the skin. The secret to crispy skin starts here. Removing excess surface moisture helps the skin roast to a beautiful golden finish.
Made with Signature Seasoning, this chef-crafted recipe turns a handful of simple ingredients into something worth gathering around the table for. A little avocado oil brings the spices together into a rich, aromatic paste that coats the chicken beautifully as it roasts.
2. Make the Seasoning Paste
In a small bowl, combine Signature Seasoning and avocado oil. Stir until the mixture forms a thick, spreadable paste.
3. Season Generously
Coat the chicken thighs evenly with the seasoning paste, working a little underneath the skin where practical. Keep the coating on the outside of the skin relatively thin. You want the spices to roast into the chicken without weighing down that beautiful crispy finish.
Serves: 4
Prep Time: 15 minutes
Cook Time: 35-45 minutes
4. Let the Flavor Develop
Arrange the seasoned thighs skin-side up on a wire rack set over a rimmed baking sheet. Refrigerate uncovered for 2–8 hours for the best results. This gives the seasoning time to develop while allowing the skin to dry for better crisping.
Short on time? A 30-minute uncovered rest in the refrigerator will still help.
Seasoning Rest: 30 minutes minimum; 2-8 hours recommended
Oven Temperature: 425°F
Ingredients
5. Roast Until Golden
Preheat the oven to 425°F. Roast the chicken skin-side up for approximately 35–45 minutes, depending on the size of the thighs. Avoid turning or moving the chicken unnecessarily. The skin should be deeply golden and crisp, and the thickest part of the meat should reach at least 165°F internally.
Chef's note: While chicken is safe to eat at 165°F, dark meat often becomes even more tender around 175–185°F. Use a meat thermometer and avoid touching the bone when checking the temperature.
4 bone-in, skin-on chicken thighs (approximately 2–2½ lb total)
2 tablespoons Signature Seasoning
1½ tablespoons avocado oil or another neutral, high-heat cooking oil
No additional salt needed when using the recommended amount of our Signature Seasoning.
6. Rest & Serve
Let the chicken rest for approximately 5 minutes before serving. Keep it uncovered to preserve that crispy skin.
The Chef's Tip
Flavor first. Salt supports. The food stays the hero. Great chicken doesn't need to be complicated. The secret is balance. Use just enough seasoning paste to coat the meat and carry the spices without overwhelming the chicken itself. And if you're after that perfect crispy skin? Don't skip the uncovered refrigerator rest. A little patience before roasting makes all the difference.
Make It Your Own
-
Turn up the heat: Add a pinch of cayenne or finish with cracked black pepper.
-
Make it a meal: Roast potatoes and carrots on a separate pan alongside the chicken. A little Signature Seasoning works beautifully on those, too.
-
Make a quick pan sauce: Transfer the chicken drippings to a small saucepan, skim off excess fat, and add a splash of chicken stock. Simmer briefly, stirring up the flavorful browned bits, then finish with a small knob of butter.

Crispy, seasoned BBQ chicken piled high on crunchy tortilla chips with creamy cheese dip and all your favorite toppings. These quick and easy nachos bring big flavor with just a few pantry staples and Signature Seasoning.
Serves: 2
Prep Time: 5 minutes
Cook Time: 7 minutes
Air Fryer Temperature: 375°F
Ingredients
-
1 can (12.5 oz) chicken breast, drained
-
2 teaspoons Signature Seasoning
-
¼ cup BBQ sauce, plus extra for drizzling
-
4 cups tortilla chips
-
1 cup cheese dip, warmed

The Chef's Tip
It's all about the crisp.
Spreading the chicken in a thin, even layer allows the edges to caramelize while the inside stays tender. That little bit of texture makes all the difference.
Make It Your Own
-
Turn up the heat: Add jalapeños, hot sauce, or cayenne.
-
Go extra cheesy: Sprinkle with shredded cheese of your choice
-
Freshen it up: Try diced tomatoes, cilantro, or a squeeze of lime.
-
Load them up: Finish with sour cream, guacamole, or ranch.
Instructions
1. Season the Chicken
Drain the canned chicken and shred it with a fork. Toss with Signature Seasoning and ¼ cup BBQ sauce until evenly coated.
2. Air Fry Until Crispy
Spread the seasoned chicken in a thin, even layer across the bottom of the air fryer basket. Use a perforated air fryer liner if desired for easier cleanup.
Air fry at 375°F for approximately 7 minutes, or until heated through with lightly crispy edges.
3. Build Your Nachos
While the chicken cooks, divide the tortilla chips between two plates. Build in layers, alternating chips and warm cheese dip so every bite gets a little cheese. Finish with diced onion and a drizzle of BBQ sauce.
4. Assemble & Enjoy
Divide the crispy BBQ chicken between the prepared nachos. Add any optional toppings and serve immediately!
